We are almost down to single digits in our Ch 13 payment plan, which is amazing. Other than the remaining payments, is there any documentation or anything additional that needs to be delivered to our attorney and/or trustee as we get closer to the end of the plan? We will have one more round of taxes this spring. Is there anything else that wraps up the plan?

You should only have to send in your taxes. Not sure if you have to hand over your refund though.
Once the final payment is made it shouldn't take to long to close your case.
In addition to making sure you submit the final year taxes, there are some additional forms that must be filed before a discharge is issued - the financial management certificate, and the certification form for domestic support obligation (required by many districts). Your attorney will know what is required, and if you've not already completed the financial management course you can do that now and submit the certificate to your attorney to upload into your case file. You must also be sure that you have made all plan payments, but you already know that.
Congrats on almost finishing your plan - that's quite an accomplishment.
