I can't afford to be charging hundreds of dollars on multiple credit cards at once; as well because of my latest inquiries and new accounts so I am trying to be a good girl.

No, to receive rewards you must spend min amounts total in a three month time frame.
But with the cards I have you earn points everytime you buy something.

That's true...for example, for the Freedom card Chase is offering $200 IF you spend $500 total within a three month time frame. If you don't spend a total of $500 in three months, you forfeit the $200 bonus. You'll still earn rewards with every purchase.

I figured that!! I always spend what I can afford to pay back. I thought at first someone meant if I didn't spend a certain amount my accounts would be closed lol.

Right, sorry about the terminlogy, minimum spend here just means the amount you need to spend, usually within three months of being approved, to get the bonus. Obviously don't spend more than you can comfortably afford, but it might be worth putting all the spend on one of the cards at first, to at least get the bouns on 1. So for spending $500 on the Freedom, you get an EXTRA $200, as well as any points you would earn normally.
In general, bonuses are a great way of getting value, you normally have to spend much more to get equivalent value. (So on the Freedom, you would have to spend between $4,000 (all on 5%) and $20,000 (all 1%) to get the $200 you get for spending $500).
