TE.... wouldn't all amex cards classify the same for restaurants/fast food? I only get 1% at many fast food establishments. Places that my BofA card will give me 2%.
That's odd. Never had a problem with my TE. Anything that falls under restaurants, be it cafe or bar or fast food, gets the 2%. The only thing I could think of is if the restaurant was inside of another business or if the franchise was just weird. Del Taco is always 2% for me.

Tried it several times but still don't get the cult like following it seems to have with Californians. That said, I can't think of any fast food burger that I care for.

I think you answered your question.
IMHO, the popularity stems from their use of fresh quality ingredients, their reasonable prices, and their suprising amount of versality for such a limited menu. If you don't like burgers, maybe you should have their grilled cheese sandwich (basically, the burger without the meat).
I like In and Out Burgers. I went to IN and Out Burger when I was LA. There is going to be one over here in TX. I don't have to go to LA. I am glad they take Amex. Last time, I had to use my US Bank Cash+.
