It could be nice if you are juggling many cards I guess. For me, I like having the physical cards, so Apple Pay really doesn't interest me much at all.
I thought the same thing when it first came out. I only carry certain cards with me and there has been times that I wished I had a card that wasn't in my wallet. It would be easy to be able to pull it up in my phone. And the phone is the one thing that I definately notice if it's not with me. I'll turn around and go back for it if I'm close enough to home.

I was waiting for Apple Watch 2.0.
You have bolloxed up my "apple watch gardening" program.
Good info, however. So in order to prepare for the few trips I take to the pharmacy and McDonalds, the two places I have consistently found ApplePay to be available, I must get an Apple Watch to be able to choose between 16 cards

Yes. Agreed. Never would I put a debit card in it. So no brainier. I guess the computer can tell if it is debit card. And ask if debit or credit.
Wells Fargo had a promo with Panera a few months ago, you use either you WF Debit or Credit card for a bonus spend, so my Debit card (that I otherwise don't use) is in Apple Pay.

I think they just chose not to default (some cards can be run as credit or debit ). Their system is pretty good at auto-draining Amex gift cards and prompting you to pay any remaining balance.
I have 8 cards loaded, didn't know there were restraints on how many you can put into it. But then again, I have no need for massive amounts of cards...

Debit and EBT make no sense if the card's obviously a credit card so it makes little sense to provide those as options. Visa/MC may be a bit harder to tell though.
I was working on adding the rest of my accounts to Apple Pay today. I haven't throughly researched it yet. Like when I buy something that has to be put together. I glance at the instructions then start working on it. I'll throughly read them later if I can't figure it out. I was able to add all of my Visa/Master Card accounts without a problem. Next up was JC Penny. Nope, that didn't work. I read an article that said Apple Pay can be used at JCP. It didn't say that their card couldn't be used so I jumped on the JCP chat and was told -
I apologize to inform you that only select Synchrony Bank accounts can be added to the Apple Pay mobile wallet application and JC Penney accounts are not yet included. Please be assured that you will receive a notification from us once the option is made available. I am sorry for the limitation.
Also asked about Walmart and was told -
As of yet, only BP Visa, Ebates Visa and Synchrony Financial Mastercard accounts are acceptable for Apple Pay. This option is not available for Walmart accounts.
Hope this helps others that are setting up their Apple Pay.
