I was lucky that I had a ski trip coming up right after I got the card, so in my case I mostly hit the minimum spend with travel expenses. I actually got to 3k when my flight home was cancelled and I had to pay up-front to book a new one while I wait for the old one to get refunded (thanks, American?)
Amex will tell you about your upcoming points there is a link just below your Points total called pending points.
