I have opted out of receiving pre-qualification mailings, and I already have a chase freedom and chase sapphire preferred. However, both the freedom and CSP appear under my matched cards. Does this mean I have a good chance (70%+) of getting approved for any chase card other than the freedom and CSP?

Sorry to disagree but the card match 'pre qualifications' are anything but that. They are a worthless marketing tool and should be ignored.
Card match isn't really meaningful.
If you want true prequals, you can't be opted out. You have to opt back in and try the actual prequal from Chase, or Citi or whoever. Cardmatch is simply marketing. Similar to Credit Karma's recommendations.
