I'm starting to think about applying for a couple more cards. If I apply for both on the same day, will it count as only one inquiry or do credit cards work differently than say a car loan inquiry?
Each counts as one they do not work like auto or mortgage.
If you immediately apply one after another you can usually get by with one inquiry. However the longer you wait the more likely it will result in multiple HP.

+1 it only happens with some lenders. Like amex. charge and revolver. sometimes cap one if you do it very fast. i mean lightning. but not lenders across the board. it will be one each for sure.
I've been able to do it with Cap 1, Amex, and Barclays.

So with same lender 1 HP is possible
There's no guarantee of any HPs for cards being combined. You should count on and expect a HP for each product seperately. If they're combined great, but as a general rule it doesn't work the way it does with mortgages/auto loans etc.

This has been my experience as well. Capital One only pulled one HP for each CR for two cards (same lender). Chase has done this and Barclays as well. YEMV though!
