I assume what you mean is can you get points to redeem for rooms. You can get two cards from Citi and one from Amex. That will get you a decent amount of points.
Not sure what the bonus is now on the Virgin Atlantic card but the miles transfer 1:2 to Hilton. Same thing for the Hawaiin Airlines cards.

I know the Citi card has a 40k bonus if spend 1k within 3/4 months but it stated that te 40k points was good for one night at a category 6 hotel. Is there anything that would be better than that as far as offers? We're pretty set that we want to stay at this particular hotel.
There isnt one card that is going to get you seven nights in a cat 7 hotel. You're going to have to apply for multiple cards. You'll have access to AXON or GLON awards with Hilton Amex (can't remember if Citi cards get you that). That will help get the amount of points you need down.
