how would long would i have to wait to change my green amex to a regular gold amex?

Generally 12 months, but you might be eligible for an upgrade. Call and ask.

How long have you had your Green? If you are thinking of a Gold the PRG would be better but I would suggest applying to get the bonus and AF waived-if you have had your Green for at least 12 mos
