You do not need to worry about this right now. when the time comes amex will let you know how to submit.

I too was recently approved for the AMEX Delta Gold with $1K CL.  I am going to try the AMEX Blue Cash conversion.  On my app, I listed my year salary BEFORE taxes.  Does that matter if I request a CLI later on?

even if you overstated your income it doesn't matter, because if you have paid your taxes, means that you worked and capable of repayment. Don't worry about what ammount of income you put it. They don't care if they see your taxes anyway, they'll know that you overstated it, but they will not do anything about it because the cardholder aquisition costs are too high. And it's better to keep paying customers then loose them.
