Capital One Quicksilver or VentureOne. Quicksilver redemptions are unrestricted, VentureOne may prefer "travel costs" which likely means one has to find a new airline ticket or hotel cost to redeem against.

What are your goals? Do you want cashback? Travel rewards? What will the card be used on? Specific hotels? Airlines? Depending on your goals the whole no AF thing can be very short sighted. For example, I got the prestige and in the first year I made a large profit on it just by using the features. The AF is $450 ($350 with citigol account), but the airline credit is $250 per calendar year so $500 back right there, $100 global entry fee, 4th night free, 50k signup, priority pass for lounges, AA lounge access if flying AA, 3 rounds golf if you golf, etc. So in that case it would be simple for someone taking an international trip to make a few hundred dollars profit minimum. Point is I would not rule out AF cards depending on your goals. Also, some AF cards have a free first year and then can be downgraded or cancelled.
The card will be used for food and souvenirs . I do not have to worry about airline and accommodations as they are provided for by an organization. I will consider cards that are AF free first year however I do not want to risk the possibility of it being downgraded. The last thing I want to do is open a credit card and then close it a year later because of the AF.

I do not have to worry about airfare and accommodations as they are covered by an organization. All I pay for is 1 meal a day and souvenirs

Straight-up 1.5% rewards on every purchase, and issued as a Visa.

this would be my recommendation since you will not have any true travel expenses and just need a card for incidentals

Reason I ask is will this card serve a purpose after it's use for this event?
I'm guessing tho you've done an x-ray of his cards already Lol...
Also what does dad have now because he may already have a card well suited for your needs and just add you to something that has 3-5% dining?
We can all give you countless names of cards but will it suit your needs I guess is what I'm asking
