Can't speak for anyone else but my reasons are: Want $0 balance reporting and managing the budget. All rewards, cashback or otherwise, go out the window if they collect interest. Multiple payments makes sure my cash goes where it was originally intended.
Companies can catch customers with their pants down on 0% very easily.

That's true. I can see where it makes sense to just pay the "minimum" early even if one plans to pay the bill in full.
