I have never had to supply either pay stubs or income tax forms for any account, including PenFed or AmEx.
Yes, it does happen. But not that often.
IMO, as long as you reported a legit income, I think you're overthinking this a bit. 
The economy would be even more dead in the water than it already is if this were a frequent event.
