Go to the Barclay Rewards boost. They have the apple store listed. 2 points for ever dollar. Its like they want you to make this purchase and then transfer and pay interest to someone else.

I would go with a card with an extended warranty. It's too bad you can't get an AMEX or Discover, since they seem to be the easiest to get an extended warranty claim out of. I would check about your Cap 1 QS and Navy Visa to see if they offer extended warranties. I know that the Barclaycard should (both my Ring and Sallie Mae do).
As far as laptop vs desktop, I have both. I use a Mac mini for my primary desktop at home (http://www.apple.com/mac-mini/). They're actually surprisingly powerful for how much they cost. I got mine for less than $1000, and I use it to write/compile code (mostly Java and Objective-C, the language used on Macs and iOS devices), Photoshop, iMovie (the built in movie editor) and iPhoto (the built in photo management software). I have had mine for over 2.5 years and it's been a great computer.
I also have a PC desktop that I use to write software in Windows (C# and Java) and other Windows-only things.
I of course use things like Excel, Word, Firefox, and Thunderbird on both desktops (and my laptops). If that's all you use your computer for (Email, Web Browsing, Word Processing, Spreadsheets, etc), then it doesn't matter what you get. OS X and Windows are basically the same as far as that's concerned.
I also have two MacBook Pros (http://www.apple.com/macbook-pro/). My latest one I got in December not because my old one died, but because it took forever to do what I needed it to do (I'm a fairly heavy computer user, I do a lot more than email and web browsing). I also do the same things I do on the Mac mini on this computer too. I still have my 5+ year old MacBook Pro as a spare just in case something happens with the new one. As far as which card I used for that, I used my Discover because of the 5% cash back and extended warranty. But it seems that that's not an option for you.
As far as a printer is concerned, I have a wireless Epson that I use between all of my computers, and it works great for me.
