What is "gardening" and what is it used for?

I have been a lurked on these forums for a while, and just made an account. I have seen several references to "gardening" with respect to credit cards on these boards. What exactly is that and why do you do it?

Gardening is the process of not applying for credit that results in a Hard Pull(HP) on your credit report. Everytime you have a hard pull your score drops a little bit, also by allowing your accounts to age your score will boost as you get points for the average age of accounts.

 

There are the monthly gardening threads, look in those and the first post explains the process.
