I'm not for sure if this thread should be placed in "credit card approval" (if so, Bump), but I recently applied for the Chase Freedom, and received the "Signature" version of the card. What additional benfit is the "signature" vs. non-signature.

I've never really used any my Visa Signature benefits but it is good to know that it's a flexible spending card nonetheless.

Yes, most of the benefits are useless to many, yet people strive to get cards turned into sigs etc, which is really the power of marketing.
The other thing to be aware of is that the sites that list the benefits are generic, each issuer has the choice of providing them or not, and some provide the same benefits on lower level cards.
In a forum with rebuilders, these cards may seem rarer than they are: in the wider world they are very common, banks push them for the increased swipe fee. Given how common they are, it becomes less likely that they would have really worthwhile expensive benefits!
