What are lenders looking for when they go through you checking accounts and tax returns?

checking: 

looking for payments made on debt not disclosed.

looking for large deposits. large deposits have to be from an acceptable source.... explanation/proof required if you need that money for closing.

taxes:

looking for write-offs..... did you write off $10,000 based on a little side business you have? well, that reduces income.
