Can I be denied a mortgage becasue the lender thinks I may switch jobs for a lower paying position

If they feel there is a high probability for that then yes. My LO knows more about me financial than my own family!

100% agreed...But it also depends on your Debt to income for this lower paying job.  And another thing that is scrutinized is applying after being on the job for a short while (there are exceptions like school) but it's mainly up to the LO in the long run.

Why would they think that?  if you told them that is your plan, then yes, but they can't just "think" it.
