USDA income question

I have researched as well as used the calculator on the USDA home loan website. I see where they take your gross income and subtract childcare. Here is my question. Last year we paid $4000 in childcare. This year it will total $9000 because both of our children are now receiving it. Our gross income minus the childcare last year will put us over the income limit. Our gross income this year minus the new childcare will make us eligible. What documentation does a loan officer need to verify the childcare to see if we meet the income limit?

Usually only 30-60 days of proof that you're paying the amount.
