The one they use when you apply for a mortgage and things.

The middle score of the three..the second to highest...the one that is in the middle...when you line them up smallest to largest...

You have 3 scores. Cross out the highest, cross out the lowest. The one left is your middle.

And to add, correct if I'm wrong, but if you are applying jointly with your spouse, the lowest of the middle scores between the two is chosen.

I believe so. But I also read once that the middle score of the one with the highest income or the "primary" applicant.

Its always the middle score of the lowest...

So long as your scores look like this you'll be fine:
 
Spouse: EQ 745, EX 413, TU 739
 
Me: EQ 738, EX 402, TU 735
 
Bingo it's 735!
