Sometimes. I mainly see a lot of debit cards.
Usually, I'll notice what cards people use if a group of us goes to a restaurant. There's a lot of debit cards (ugh). Being near Disneyland and knowing a lot of Disney people, there's an usually high amount of Chase Disney cards. One of my SO's good friends usually uses her Nordstrom Visa, and sometimes a Fidelity AMEX. My BFF sometimes uses a QS (doesn't appear to be Signature). He also has one of the old school Cap One cards in his wallet, probably an old Platinum. Roommate uses his BCE typically.
All the time! I work at a casino, and I see all sorts of cards used, from First Premier to Ritz. We also don't have ANY self swipe machines at my particular casino except at the cage, so I even get to touch fancy cards often! Sadly, people do use CCs far more than debit cards so they can have more money to play with, and a lot of them admit this openly. But it does give me something to talk to guests about while waiting for their card to process!
Oh, and just a friendly note: I will ask you to sign the back of your card if I see your card unsigned. Unfortunately, "SEE ID" is not a valid signature and I'm frowned upon by the card issuers for asking for ID in the first place.
I pay more attention now than ever before.
i always took notice of Amex charge cards since to me that just meant you had enough swag to pay cash for everything.
now that I'm more versed on the hierarchy of cards I do look not only to see what people throw down but quickly scan their wallet if I have the opportunity to see what choices they had to pick from.
now that I've aggressively shopped for cards I can tell what most cards are just from their network logo and background color.

Friendly note P.S: Using your credit card at a casino to buy poker chips is a considered cash advance by your CCC! I will inevitably have someone call me before the end of the week and ask why they were charged a $60 cash advance fee and a crap ton of interest when they paid their balance in full.
As to the topic, I do usually find myself spying on what other people are paying with at the POS.
Yes, I look as well. I especially like when I see someone use a Discover card. It's like we're a part of some special club.
I had just got done ordering food at PeiWei and used ApplePay Discover. I saw a guy use his Discover it card and wanted to ask him if he had an iPhone, because there's a 10% promo going on.
All the time. It's like looking at everyone's cards in their signature line on this forum, always checking out what people have. I'm constantly sneaking peaks to see what people have, this forum has warped me
