I've noticed that each of my credit reports has a different amount of total accounts listed.
Is that simply becasue some accounts only report to 1 or 2 of the 3 reporting bureaus?
Does it have any impact on scores? For example if one report is missing an accounts?

That's exactly why. Companies have to pay to report your accounts.
And yes, what reports to your file affects your score.
Say you have a perfect 'mix' (such as a mortgage, an installment loan, 2 cc's, and a store card on one report (providing all history is good)...that should be your best score (potentially).
Now say everything but the installment reports to another bureau. Most likely you'll have lower score, because your credit mix isn't as diversified.
