Ill probably be trying to get a car loan in or around may 2010. Will they accept my tax returns to determine my income, or will they want check stubs from this year??

Probably depends on the situation. I don't recall having to provide either when I purchased in August 2008. If they do want to see proof of income, I would assume by May 2010, they would want to see something more recent than your 2009 tax returns.

I last app'd for and received a car in 2003, so it has been a while, but I had started a new business, thereby increasing income. They didn't want to see my tax returns, which wouldn't have showed my new income anyway, but insisted on seeing my paystubs and other proof of current income.

Will vary by lender and your situation. For me, they requested the last two year's tax returns. No request for current income verification, although it's significantly higher than it was last year.
