Will Amex approve one for an AU though they have a BK showing?

It doesn't hurt to try, but based on experience AMEX will absolutely not add an AU if that person has had any delinquent accounts with them in the past, even if it has been years and years since then.

I added my mother as an AU to help her out after she filed for BK13. Amex hasn't said anything.

However, they say on the AU addition form that anyone who has burned them in the past cannot be made an AU.

If Amex was included in AU, BK, then 'no'.
