Is there any other way to take advantage of the statement credit from the $200 and from the gold card $100 If you don't travel like to buy a gift card or something even to use in the future from the Amex listed airlines ?

No. AMEX has pretty much closed all the easy loopholes for redeeming the credit through gift cards or similar routes. If you don't plan to fly this year then you might just have to eat the loss
