Is there any reason why I would need to disclose being on probation? Are there some lenders that would not give me a loan because of this?

I dont think there is a reason why you cant,

But you need to have full tie income or a guarantee source of mone

dont ask dont tell..... as a lender, i wouldn't bat an eye at this scenario..... unless there is a job gap. then i would want that explained.

i would NOT deny the deal because of the felony probation.
