Would making yourself an AU on a card with pefect utilization/payment history give you a good idea of an impact that you may get on your score that actually opening that exact card later would have?

No. Because a new account won't have the age, payment history, and credit limit an AU account would (assuming the AU is not excluded from scoring - as what may happen with some AU accounts).

With a new account, you'll likely see a FICO ding for having a new account (reducing AAoA), you'll have to establish a payment history, and there's no telling whether it will improve current utilization because there's no way to know what the credit limit will be.

The fact that the AU and new card would be the exact same card (as far as lender / type) has no bearing at all.
