I borrowed an iPhone, just made sure I didn't over their data with my Apple ID info...once approved, signed out as me, and signed back in as them. Done...

You should have been able to use your iPad to apply, but maybe it's an older one without touch ID?
Even once you get the card, there's no way to pay the bill except via the phone with Apple Pay, so if you don't own a suitable device, you'll be a bit stuck.
Some day I'll get an iPad again, and I may see what I can get for an offer, but I won't apply. Don't need another card, especially a fruity one.
That's what I am thinking. I put in $35,000 and got approved for $3500.
