This should work as long as you are decently well qualified...
I applied for my Blue Cash Preferred and Gold Preferred the same day and got 1 inq (did the gold first and was auto approved so I did the other)
That said, there is one way you can get 2 inq. If you apply for 1 card and barely get it (7-10 day message, or possibly even just barely getting autoapproval) and then you apply for another card, it's possible for them to do a second pull on all 3 agencies. Not the most common occurance, but it can happen, so just keep it in mind.
I did recieve my EX FICO score in the Approval letter that AMEX sent me, my EX was 751 as of 9/2/2011 so happens to be the lowest of my scores, still more than adaquate for any of their products but I was still surprised how far out from my EQ and TU scores it was. The data on EX is exactly the same as the others except for two hard inquires from 2009 which should not have any scoring significance.
