If I buy gift cards on a site like Cardpool with my Amex Blue Cash Everyday or Chase Freedom will it be a regular charge, or will they count it as a cash advance?
The only way to know is to try it for a small amount first.
Each merchant code their transaction differently. Some merchants do consider giftcard as cash advance.
What about buying in stores say Target, publix or Walmart?

When buying gift cards in store I've never had an issue. Its classified as a general purchase.
I've purchased gift cards from Target, Safeway, Starbucks, Home Depot, Pinkberry, and a handful of other places using my credit cards (Citi MC, Chase Mileage Plus Visa), and they have been charged as regular purchases, not cash advances. At Safeway, I've bought gift cards for other retailers (they have a rack of cards for Amazon, Bed Bath and Beyond, etc.) and those have been charges as regular purchases as well.
Anybody here tried buying amazon e gift cards and applying them to your own account? I shop from amazon a lot.
I've had the same experience purchasing in the store, I'm just worried about on the web from places that just sell gift cards. I tried emailing Cardpool to see what they say.
So what did they say?
