I have 7 cards. Honestly, having a smartphone makes it easy to keep track of them. I use Manilla to access all of them at once on my phone, plus I have all 4 of my lenders' web apps so I can monitor specific activity on each card.
If I have a new card that has a certain spend that needs to be met to achieve the signup bonus, then I prioritize use of that card. Once I've met spend, I return to regular usage of all cards for their various rewards categories.
