I recommend using one of your Capital One cards or your Discover (if accepted) - they don't add the additional FOREX fee for the conversion, saving you 1%-3% on each purchase (relative to many other cards).
Edited to add: I'm not assuming your other cards all charge the FOREX (foreign exchange) fee, but I'm just speaking to the cards in your signature that I know don't, i.e. Capital One cards and Discover. You might want to research the others before your trip.

And even more importantly, if a "helpful" merchant offers to charge you in US $s ("so that you know exactly what will be charged sir/madam") , decline and insist on being billed in local currency. So called Dynamic Currency Conversion is a big money maker for the merchant, as you get a very bad rate (and still pay Forex fees if appropriate). If they charge you that way without asking, complain and insist on local currency charging
