I see this said a lot and I am not sure where it comes from. American Express is not that difficult to obtain, so it's not like it's any indicator of financial wellness or future payment performance.
I spoke with a credit analyst when doing a recon for my Chase Ink. When he looked at my report, he specifically commented that I have an Amex and commended that fact. So, I suppose that at least some underwriters like it when they see Amex on a report. As with anything, YMMV.
