Married in CA can only one be on mortgage?

I am married in CA and am wondering if I can buy a house without using my wife for the mortgage in any way? I don't mind her still owning half of the house. She just doesn't want on the mortgage, or her credit pulled...

Yes, just one spouse can be on the loan with any type of mortgage out there... however if you want to avoid having her credit checked then you'll want to look to use conventional financing; as FHA, VA & USDA financing all will require her credit to be checked for the purpose of including her monthly debt payments into your debt to income ratio for qualifying purposes.
