Savory Instant Pot Groats
1:almost 2 ratio of groat:water, 20 min., natural release. None of this presoak nonsense.
Sauteed quarter onion in the IP, added 1/2 cup of groats & almost a cup of water, salt & pepper.
Meanwhile, sauteed another 1/4 onion in a sauterne, added thinly sliced red pepper, diced plum tomato and, at the end, a half bag of TJ's power greens from the freezer, squeeze of quarter lime. Added cooked groats. Stirred & plated all but a couple spoonfuls (just 2 of us). Added some sliced rotisserie chicken, then covered with a spoonful of the remaining groats.
mrs. e was pleased. Me too.
Groats have a barley-like texture, but more chewy & nutty. I imagine they'll be good for breakfast too, tho' I'll likely go with a sweet preparation.

I made it to work, no issues. My coworkers have told me not one of the upper level managers have come in to cover all week and the general supervisors have been covering the shifts. I am not surprised. 😒 They don't want to do it. I parked on a lower level tonight, in case anything gets into the parking garage and freezes.
