I'm in the process of buying a house this week and want to app for 1 or 2 cards as soon as the process is done. I presume I'd want to use the new address to apply so the cards would be sent there, but will it affect my approval if that address hasn't been posted to my credit reports or anywhere else yet?

You definitely want to use the new address. I went through something similar when we bought a new house, and then I applied for car loans and cards. I used my new address, but some lenders ask if you've lived there for longer than 2 or more years, for instance. If you say no, it gives you another field to fill out with your last address. Some banks don't have that option and you just gotta cross fingers. The worst thing that happened to me was one bank wanted proof of new address. That was it.

No. I applied for a few cards last year after I moved to a new place. It doesn't matter as long as they can match you with a CR based on your name and SSN. Many of the apps I filled out asked for time at current address and if it's less than a year they also asked for previous address. I assume that they used that previous address to look for your info if necessary.
If you already bought the house and can prove it is yours, I would use it. It *may* flag you for fraud, and lenders might ask for utilities billing documents. Just my 2 ¢.
I'd use the new address. While you might have to jump through some hoops it's really the correct thing to do. Once you've moved from the old address *technically* applying and still listing your old address is fraud. Yeah, I know that it's not earthshattering, but realistically all applications you're certifying the information provided is correct and supplying the old address isn't. And at some point in time you have to make the switch anyway. I'd bite the bullet and do it on the up and up. It won't be like they can't see the mortgage pulls against the CRA's anyway.
Just a reminder which I'm sure we're all aware of also.... don't use the old address believing that having a forward will send it to the new address as the Postal Service will not forward credit cards due to security risks.
