I did a mini app spree and was approved for both the Amex Delta and Chase Freedom Unlimited.
Never had a Discover so decided to app for the 5% cash back card.
After submitting my application I get counter offered with the same card but higher APR. I dedcide what the heck I'll take it. Finish the process and then they ask for documents to be uploaded. I upload them my docuemnts for verification and do a Live Chat with a rep to check status. She confirms recipt of my info but tells me that she cant give me a decision and that I will have to wait 7-10 days. Is this still a good sign?

Well, they are going to a lot of trouble to tell you no. Applying for several cards at once can set off alarms. I believe you will be approved. However, you should get the interest rate to its lowest. Discover will work with you to do that. About very six months is a good rule of thumb is a good schedule to ask.
Discover has the best customer service.
Your other two cards are great ones to add to your porlfolio.
