Even though the total was $600 only 100 was charged to the AMex. So that's all that's covered and that's the most they will payout.

RIght, and this is the "value proposition" of the insurance sold by carriers. By signing a contract for service, you can get very big discounts off the phone, but if you break/lose it, you would have to replace at full price. Using carrier provided insurance, you can avoid this. EXCEPT:
1) You usually get a refurbished phone, not a new one
2) There is a large deductible
3) The monthly cost is quite high
So unless you are the type who has lots of accidents, pay with your credit card so at least you get the discounted price back and save the money.
