I am on Amex.com looking at all the offers for the first time. Some I can definitely use. They do expire. Is there a way to get emails or notifications about new ones and others expiring?

I'm not sure about setting a specific reminder for Amex offers; I generally automatically receive emails from Amex about new offers and the status of the ones I have opted in on via email.

They will sometimes mail you about expiring ones. It's not something to rely on however. As far as new ones... you just have to make checking apart of your credit maintenance routine... and then hope you remember if there was a useful one.

No, you just have to look. And it says they may not be there if you don't activate it and come back later.
If you activate it then you have until the expiration date.
Many allow multiple redemptions up to a total amount back. If you're unclear about that one, load it and then go to the customer service chat box and ask if that allows multiple smaller redemptions up to the total.
In "Account Services" check the "Marketing Email Preferences" and make sure you have "Offers" checked.
Note that there is no limit to how many offers you can add to your card, but the display limit for available offers on the web site is 100, but there are way more than 100 offers available.
If you don't see something you like on the list, add a bunch of offers to your CC and reload the list to see more.
Sometimes the same offer comes up more than once a year.
I'm on my 2nd round of getting $7 back on my YouTube Premium subscription this year. Each time the offer comes up, you get the $7 back twice. Also my 2nd round of $10 back on phone or Internet service this year, another that you get the cash back twice for.
The key is to watch out for offers on stuff you were spending money on anyway, don't get suckered into the trap of "saving" money on stuff you were not going to buy anyway!
Sometimes, Amex will send me emails just to go check the offers list and other times they will email me on very specific, targeted ones. They gave me $10 back on NY subway rides (worth about 3 and a half free rides) and 5% back on groceries (but it was a $400 cap). I don't know what you have to do in order to get nicer, more targeted offers, but they do email reminders a bunch of times before these things expire.
