Welcome to the forums, @Spacewater ! The best cards are the ones that fit your spend. It's hard for anyone to recommend a card if we know nothing about you. What does your spend look like? How is your credit profile? Is your score 350? Is it 850? Have you opened 1 card in the last 10 years? Have you opened 10 cards in the last month? Details are required unless you want a bunch of people throwing out arbitrary answers that you would have more luck finding with a Google search.

You can use the CardPointers app it will give suggested cards by spend category
Thank you! I've seen a post here on myFico with username TheFIGuy, he posted the list of all cards that give 2% cash back. I'm looking for a similar list but with 3% to 5%. Not specific to any category though, I'm just curious. I'm currently using my NFCU More rewards alot.

So you asking about flat rate cards? AFAIK, there are no such cards paying 4 or 5% on all transactions. There are some that pay 5% on the first $1000 each month for example, which may or may not be close, depending on your total spend. AOD has stopped offering 3% card to new customers (current users are grandfathered, at least for now), USAlliance does have a 3% card but as of now the 3% stops at the end of 2022.

If OP really means flat rate cards, doesn't matter so much. Why doesn't everyone just get the flat rate 20% card and forget all the worrying about which card to use when!
Have not seen cards mentioned, outside of unattainable AOC.
MoreRewards is pretty close to flat 3%, if you don't want to juggle cards, you could do worse than that. Most of us around here do the juggling, though.
