Is there any risk to just saying $100,000 or $125,000? Can I play it off like I work for the same previous company? Or should I just say self employed and make up an income? Do they look into this? Thoughts?

Never lie on a credit application. This is actually illegal. It also will bite you in the backside if you ever have to file for bankruptcy and if the issuer finds out, they can close your accounts and blacklist you from getting another one with them.

Without having a steady income, you’re in a tough spot. Hopefully someone comes along with an answer for you.

Also NFCU should have told you that the lower interest product change offer is only valid when you ask. It’s based on your last AR so if your score is expected to go down, expect any PC APR offer to go up.

You should not lie on the application.

Are you currently using your savings to make payments?

I would continue paying from savings till you're employed and with verifiable income.

I had to provide POI twice, so I'm glad I did not try to be creative with numbers

Good luck!
