What if I'm not sure of a new address right away? Would it be bad to keep using my old address until I have a new one?

 

They'll see usage in a new state, so does that matter?

 

Do I need to call all of my CCs and let them know I'm in a different state, even if I don't have a new address yet? (I'll probably be staying with family for a month or two until I find a place.)

 No problem keeping your old address until you are ready to report the new address.   I've done that many times with no problem.  As long as you get your mail forwarded you got nothing to worry about.  If you plan on using your credit cards in a new state it would be a good idea to let your creditors know it's you making those charges.
