Optionally, and not that I recommend any apping anytime soon, but something to consider on the horizon:
GECRB offers some co-branded retail CCs such as the eBay MC, PayPal Extras MC, TJX MC, WalMart Discover, Sams Club Discover, GAP Visa, Old Navy Visa, AEO Visa, etc. Decent products if you shop frequently with those retailers or have a loyalty program already. The downside - high APR terms and it's possible that if you do not meet their elegibility criteria then you could be stuck with the retail version of their card until you receive an invite to get upgraded.
But as myjourney mentioned above, the "majors" will be a little tough to get at the moment based on what you shared.
I wonder if I should just hold off and eventually upgrade macys or bloomingdales to the amex versions? I don't know what the criteria is though to be considered.

Your scores will definitely need to hover ~700 to be elegible for either AMEX version and a generally clean profile. Although both are underwritten by DSNB, the Bloomingdale's AMEX has a bit stricter criteria (both AMEX versions have horrible APR for newcomers). You can always initiate the request either by phone or chat to submit for either version.

I'm going to wait awhile but the next card I get I want to be just a regular credit card because I think I have enough retail cards. Do you have any suggestions as to what may be the best option to apply for ?
Bring down UTL and try Discover IMHO
