I'm staying at a Sheraton and you get a $5 voucher or 500 star points for declining house keeping. I figured 500 star point is worth more if you value SP and miles, but I want to know what 500 sp is worth. Any help will be appreciate.

Worth is dependent on how they are using. Generally speaking they are certainly worth more than a cent each, so I would personally take the Starpoints.

2 cents per Starpoint is a fair valuation to expect. So around 10 bucks.
