Hello,
so so I recently lay turned 18,2 months ago, and since then I have went on a streak trying to get my financial independence. My main question is what can I do to build my credit so that I can eventually get an American Express card.
As of now I only have 3 accounts totalling under 900.
Kohls Charge
Capital One Student Journey Card
Capital One Quick Silverone.
Although I have had them for only 2 months i have made 2 payments and from conception have kept my utilization at under 9%.

I would try and use and make sure to pay off your cards with perfect payment history for another 6 months to be safe and maybe try, have you looked at their prequalify link on their site i think its still there at least.
Congrats on getting in the game - curious, what it is about AMEX that makes it your dream card. Are we talking about card characteristics or is it more along emotional lines and what a person with an AMEX "is" in your mind?
It's kind of both. Well first I will admit im still a kid and having a card that's half clear seems so cool. Other than that I have never known anyone personally who has one. It seems so exclusive and I wanna be a apart of it.
Welcome here! The best you can do to build credit is make on time payments, keep utilization percentage low, avoid getting into huge debts (with credit cards, it may be tempting to get into), have good established long history with different mix of credits (auto loan, student loan, credit card, etc). The latter may not apply to you at this point because I don't want you to get a bunch of accounts just for the sake of building credit. Also learn from others' mistakes so you don't have to go through it. So come here and read and have fun.
I applied for Amex Blue the day of my 18th birthday. (Literally on my birthday). It was approved and opened two days later. It can be done! I was an auth user of a card (not Amex, MBNA at the time) for about two years with my mom though.

Congratulations on starting with the three cards you do have. There's really not a bad one there.
My suggestion is to use the Capital One cards for daily spend, whatever that amount is per month, but not for building any amounts you cannot pay. Don't ever go over the limit, pay rapidly after the statement cuts, and certainly before the due date of the payment. Pay before statement cuts if you are pushing the existing credit limit, but don't worry about the 9% utilization thing for now. The low limit cards aren't going to be relevant for 9% utilization restrictions. If the card limit is $300, charging up to $200 - $250 is not a problem, as long as you are paying it by the due date printed on the next statement (and never going over limit).
This heavy usage will get you two things:
1) A good history with Capital One, which will lead to better, higher limit cards a year or so from now
2) A good payment history on your CR after 7 months so that your chances of getting the AMEX are very good at that time. No rush for the AMEX, it will be there, just keep making payments on time and never go over limit.

You look like you're off to a good start with some nice cards.
The only way to get your "dream" card or really any further cards will be time and history. It's not going to happen overnight. Use your cards responsibly, do not charge more than you can afford, and pay them off every month. Establishing a positive history for a year or two will make a big difference in your report and scores. Then go from there. Do not app spree or rush into things. Take your time and build it up slowly.
I would agree about the whole "are you sure it's not just an emotional thing" regarding Amex. Although if you go for one of their no AF options there is no cost to having it, there's still nothing super "exclusive" about Amex. That is just how they are percieved. In reality, plenty of "ordinary" people have Amex cards. Make sure you select one that benefits you and if none of them do, then don't go for it.

As others stated. Just keep doing what yourre doing. For an eighteen year old. 6 months seems like 6 years. Hehehe. But don't worry. You will get it. When I got my first amex. I was also excited. After I put it in the sock drawer. I realized. I had better cards even then amex. Lol.
