Can someone explain what these services are? When I go to their website, they really only link the stores who take them. Is it like Paypal where you store your cards and just use the checkout when listed? Also, what are the benefits of these sites? The security of not having to type in the card? I'm interested because I'm being offered promos for using both.

It's just a method of storing credit cads to simplify the checkout process so that you don't have to enter the credit card information. They do run, as you mention, some nice promos from time to time. American Express also has a similar feature.
