How accurate are the scores provided by Discover?
I was surprised to see my FICO score was 756 after having my IT card since the end of May. It's my only credit card and i applied for 2 more around the same time so i figured those inquiries would hurt me more. I've only made one payment to them. Statement was ~$250 due, went ahead and paid the $1,100 balance ($1,250 CL). Is there any reason why my score started out kind of high?

Discover provides TU 08 scores, which are accurate.
They may not match some other FICO scores, for reasons explained in many threads here.

Do you have other types of credit besides the Discover card? Auto loan, student loan, anything? Or have you been an authorized user on someone else's credit card? A good history with those might account for how you've already established a solid (and nice) score even while you've only gotten your first cc.

That could be it! I completely forgot when I was applying for credit cards I had my parents add me on their account, but I don't even think I activated the card. So I guess just being added was enough?

Get a free copy of your credit report to see exactly what is in there. That's your best answer. www.annualcreditreport.com
With regards to you having to activate your card(s), for most issuers, that is not needed to have those accounts to show up on your report.

All scores are accurate but only for their given scoring models (i.e. you can only compare the FICO from Discover to other FICO's using the same model and data from TU). You can't rely on one scoring model to determine the score generated by another scoring model.

There is definitely a reason but we cannot tell you what that is. Scores are based on the data in your reports. You'd have to look at the TU report used to generate that score.
Well with good management it should start pretty high. Depends on your credit profile; also that score is accurate fico score but there are different fico scoring models used.
