I was wondering if anyone here has had a credit score over 700 (Fico 8 or mortgage) with having multiple paid charge offs?

Every profile is different but the answer is yes.
I had (2) COs from Cap1 showing until August of 2020. I crept up and over 700 and then got "stuck" in the 710s until they fell off August 2020 at which point I finally saw 35+ point jumps and broke over 740s across all three CRAs.
I've been "stuck" in the 745-755 since that time.
My only two remaining negative derogs are a single 30 day late from Discover from September 2017 and a mortgage lates from September 2015.
I don't expect I see my next big move until the mortgage lates fall off next year.
I don't agree with the mortgage late (there were extenuating circumstances, sold my home but there was a delay in the payout to the mortgage company at the time to payoff the loan) but I have just let the sleeping dog lie as I am over 740s now.

Haven't updated my siggy but yes, FICO 8 EQ 702 with three Charge Offs.
So yep its possible.
This is based off of today. I just gained 23 points for paying a charged off credit card with Transunion. Waiting on Experian and Equifax to report.

One paid / two unpaid / all reporting Zero bal.

Data point: My COs were paid, settled for less in 2019, with 0 balance.
So the $600 Capital One Charge off reported to a $0 balance. Transunion increased 27 points, Experian increase 12 points and Equifax went down -4 which is weird to me. SMH. No idea why Equifax has to be the weird agency.
