- Are business cards just handled differently such as "You'll get it when we decide" so asking is not available or "You'll be granted increases as we see fit" meaning I just need to keep an eye on my monthly statements as that's the only place that I actually see the limit. I don't see it referenced anywhere on their site....(which is the same on my personal Charge Card)
- Do I need to call in and actually speak to someone to accomplish this and if so...what's that like?

Even though the POT option is there, it's merely for your convenience, for the occasional times when you may need it. Amex doesn't necessarily like you using a charge card like a revolver account. They prefer that you pay your charge cards in full.
In general, over time, depending on your monthly spends, Amex may/will adjust the POT limit to your highest spend e.g from $2,000 to $5,000/$8,000/$10,000, without you having to ask.
If your Gold card is new, don't bother calling since you haven't yet established a spend/payment pattern and it also won't be a good look for you.
