Should I get more amex cards? Since they only softpull me I want get a hard inquiry then get other banks?. Or diversify and start getting other credit cards from other banks so all my eggs are not in one basket?
YMMV. People tend to stay in 1 ecosystem, but do understand that there could be a CAP with limit.
Amex has a wide variety of cards. Yet they tend to CAP their revolvers and put a ultimate spend on their charge cards.
If one is looking to add to their overall CL, they will add other lenders. If one just likes the product of said Tri-fecta, then stay with 1 lender.
Then there comes a time when one is looking for more lending, and they can't find what they want because they stuck with just 1 lender.
Identify what spending you tend to do most, evaluate whether your existing card(s) cover that, and decide what needs you have. Then look or ask here to find out what card(s) will cover those categories, and choose accordingly. Then you maximize the benefits of your apps and you have the best rewards return on your "investment".

Just makes sense overall not to keep your eggs in one basket

Don't bet the farm on that always being the case as there are a number of members here who can tell you from personal experience that it isn't always the case.
As to focusing on AMEX cards, a strategy of focusing on a single issuer or even a single payment network* can backfire. Better to diversify with a mix of issuers and payment networks.
* This isn't strictly theoretical; a few years ago there was an incident where the Visa payment network went offline in Europe for a few hours. If you didn't have a MasterCard or other non-Visa handy you were SOL for the duration of the outage.
